Ajvar
is one of the most delicious specialties and greatest
secrets of the Balkan cuisine.
According to the legend ajvar was a common dish on the
table of the Ancient Greeks and heroes ( Plato, Aristotle,
Alexander the Great,…)
Ajvar is a Serbian specialty prepared in a traditional
manner. It is hand prepared in “huge open pots” on large
wood-burning stoves.

Ajvar
is a special kind of salad, made of red peppers. The peppers
are first burnt, then the skin is carefully peeled off
and thus obtained pepper is cut in tiny pieces. Before
serving little salted and cut garlic is usually added.
It is served as side dish with various meat, and it particularly
goes well with grilled meat. It is used as an addition
to many other dishes.
Ajvar is a seasonal salad, always prepared in summer,
when the pepper harvest is in earnest, and it is used
throughout the year.
Ajvar is made from hot and ordinary taste peppers.
